About us
We are a hazelnut processing company in Altınordu, Ordu, on Türkiye's Black Sea coast. We crack, size, roast and pack in-shell hazelnuts at our own facility. bi'dolu is the brand we use to send these hazelnuts to homes.
Who we prepare hazelnuts for
At our facility we prepare hazelnuts for chocolate and confectionery makers, bakeries and wholesalers: kernels and roasted kernels, blanched kernels, chopped and sliced hazelnuts, hazelnut flour and hazelnut paste. The size, roast level and particle size are agreed with the buyer for each order.
We started bi'dolu to bring the same hazelnuts to people who want to eat them at home. There are three products for now: roasted hazelnut kernels, natural hazelnut kernels and in-shell hazelnuts.
Where the hazelnuts come from
We buy hazelnuts from orchards in Ordu and Giresun. Most of these orchards are on steep slopes facing the sea, and the hazelnuts are mostly picked by hand.
After drying, the hazelnuts arrive at our facility in their shells. Our in-shell packs are made from these hazelnuts, sorted by size.
What happens at the facility
- Cracking
- A machine cracks the in-shell hazelnuts and separates the shells from the kernels.
- Sizing
- The kernels are sorted by size. Only 13-15 mm kernels go into bi'dolu packs.
- Roasting
- The hazelnuts are roasted in an oven at a set temperature and time. For industrial orders the buyer chooses a light, medium or dark roast.
- Skin removal
- The skins of the roasted hazelnuts are removed, which leaves the kernels light in colour.
- Chopping, slicing, grinding
- Chopped and sliced hazelnuts, hazelnut flour and hazelnut paste are made for industrial orders. These products are not sold by bi'dolu for now.
- Checks
- Each batch is checked by eye and by measurement before packing.
- Packing
- bi'dolu packs are filled as orders come in and sealed in resealable doypack bags.
bi'dolu packs
The kernels are 13-15 mm in size and Giresun quality. We add no additives or preservatives. Packs do not sit on a shelf: we fill them as orders come in and ship them in resealable doypack bags.
